What's for Dinner.

Ryan has been helping out with the menu plan lately.  I'm really enjoying it, and not just because he helps with the cooking.  He's not the must-have-a-recipe type like I am.  So fewer links below, but delicious food for dinner!

Monday: Dijon crusted chicken, rice & veggies
Tuesday: Quesadillas and fruit
Wednesday: Grilled Ham steaks
Thursday: Lasagna
Friday: Burgers, brats and fries

A Story

Camden has a pool.
Camden has a friend, too.  She is very cute!
Sadly, the pool is not big enough for both of them.
It's hardly even big enough for Camden.
But that's okay because his friend would rather play chase.
And they all lived happily ever after. The End.

A favorite as of late

Delicious fresh veggies and pasta. Here's the recipe.

INGREDIENTS
Pasta, any variety
Olive oil and butter
Farmers market Yellow squash or zucchini
Maybe some garden-fresh tomatoes or red pepper
Dash sea salt
Parmesan cheese if you feel like it.

DIRECTIONS
Cook pasta. Chop 1/2 to 1 whole zucchini giving the ends to your dog.
[optional] Dice the tomato as small as you can because you don't really like tomato but after being sauteed in butter it doesn't taste super tomatoy.
Next, trying to time it just right with when the pasta will be done, melt about 1 Tbsp butter in less oil. Saute squash [with red pepper], adding tomatoes later-on. Throw in some minced garlic if it suites your fancy, usually when there are no red things involved.
Place cooked pasta in a plate or bowl or fun Italian themed pasta dish wedding gift. Dump the squash mixture over, being sure to get all the melted butter for flavor. Sprinkle on a dash of salt, add the [optional] Parmesan cheese.
Eat, giving no more to your dog...because it tastes too good to give any away.

It is HOT here. So I'm trying going to keep the oven off with three slow-cooker recipes this week.  (A completely oven-free week is just to much for me to think about.)

Tuesday: Slow cooker pork chops, grilled zucchini
Wednesday: Chicken Nuggets, green beans
Thursday: Apple Cheddar Turkey meatballs, veggies and rice
Friday: Buffalo Chicken Pizza

An Omelet

Today we picked up our third CSA bag. For one option we had a choice of pink oyster mushrooms, basil or scallions. As you see in the post below, we have plenty of basil, so it was between the mushrooms and scallions.  But we also got onions...

Me: "What would you do with the mushrooms?"
CSA gal #1: "We always just saute them with butter and eat."
Me: "Hmm, that might be good with the kale, too. Wilted kale and mushrooms..."
CSA gal #2: "That would make a good omelet."
Me: "Yea. Good idea."
CSA gal #2: "That's one fun part of this... listening to what others would do with all the food and getting ideas."

On our way home.
Me to Ryan: "A kale and mushroom omelet sounds really good. Are you any good at making omelets? Mine always end up sort of scrambled."
Ryan: "Umm... well, it would be bi-fold not tri-fold." (ok Mr Not-too-fancy .)
Me: "Yea, that's what I was thinking. Mine still end up scrambled."


Professional omelet maker husband's however, do not end up scrambled.
We also used a green pepper and onion from the CSA produce.  And it was GOOD!

Vegetable Adventures: Cucumber and squash flowers

A little garden update:

There has been some beautiful squash blooms in the garden this week. I hope some delicious zucchini and acorn squash follow.

The West bed with it's squash and tomatoes.  Lots of green tomatoes and one almost red one.  Neither my husband or I actually like raw tomatoes, so I hope they ripen all at once and I'll make some fresh salsa, Yum!

The cucumber plant has vined all up and around the trellis, with some guidance.  Lots of blooms on it, too.  I'm not quite sure what to look for as far as cucumber starts, but I suppose I'll learn as long as some grow.

The parsley in front of the cucumber is flourishing, as are all of the herbs.  It's definitely time for me to 'harvest' some for drying and storing.  That is something I still know little about.  Here's some basil haphazardly drying in the kitchen.
I also have rosemary, thyme, oregano and chives. Does anyone have recommendations for a good website or blog post about drying and storing herbs?
